Caramel Pecan Brownies

OMG. I have lost count of how many times I have made these brownies in the past week (don’t worry I gave some to my friends and neighbors) but wow. These are truly a must. I am so excited to see all of your creations!

These are adapted from Broma Bakery Better than Boxed Brownies.

Caramel Pecan Brownies

Ingredients
  

brownies

  • 1/2 cup butter, cubed
  • 1 cup sugar
  • 3/4 cup AP flour
  • 4 ounces bittersweet chocolate, chopped
  • 1/4 cup dutch processed cocoa powder
  • 2 eggs
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/3 cup baking chips

caramel

  • 1/2 cup sugar
  • 2 tablespoons milk
  • 5 tablespoons butter
  • 1/2 tablespoon water

topping

  • 2 ounces chopped chocolate (for the topping)
  • 1/4 cup pecans (for the topping)
  • pinch flaky salt

Instructions
 

Brownies

  • Preheat the oven to 350F. Line a 8 x 8 pan with parchment paper and set aside.
  • Add the butter to a microwave safe bowl. Melt in the microwave.
  • Add sugar to the melted butter, stir to combine. Place in the microwave for 30 seconds. Stir. Place in the microwave for 60 more seconds until the mixture is bubbling.
  • Add the 4 ounces of chocolate into the mixture, stir. The chocolate should melt right away, if it is still lumpy, place back into the microwave until everything is well incorporated.
  • Add the eggs to the bowl. Whisk until the mixture looks smooth.
  • Add the vanilla, salt, flour, and cocoa powder. Mix everything together.
  • Fold in the baking chips.

Caramel

  • In a small saucepan over medium heat, melt the butter. Add the sugar and stir. The mixture will begin to bubble. Now, add in the water. Stir well, and add the milk. Once the caramel has slightly thickened, turn off the heat.

Toppings

  • Place half of the brownie batter into the lined pan. Add half of the caramel mixture and swirl it into the batter. Place the remainder of the batter on top and smooth it out.
  • Sprinkle the chopped chocolate, pecans, and flaky salt on top.
  • Place in the oven for around 25 minutes or until the mixture doesn't look wet anymore.
  • Let cool for 15 minutes, then drizzle the remaining caramel on top! Let set, then cut and EAT!
